A pesto created with Genoese PDO basil, dried tomatoes and Italian tomato pulp. PDO means Of Protected Origin and only the Liguria region can cultivate this precious raw material. The Genoese basil PDO is the most valuable basil in the world because it grows on hills over the sea, in a mild climate all year round. This microclimatic combination allows us to create a delicate and refined pesto. A good Italian red pesto, to be declared such, must in fact obtain a perfect balance of ingredients: basil, tomato, oil, dried fruit and cheese. No taste must prevail and no taste must be weak.
To enjoy our red pesto in the best possible way, we recommend cooking fusilli pasta "al dente", draining them and mixing pasta with pesto in a pan. Complete the dish with a sprinkling of Pecorino Romano PDO, a leaf of fresh basil and extra virgin olive oil.
