A pesto created with Genoese PDO basil and truffle. PDO means Of Protected Origin and only the Liguria region can cultivate this precious raw material. The Genoese basil PDO is the most valuable basil in the world because it grows on hills over the sea, in a mild climate all year round. This microclimatic combination allows us to create a delicate and refined pesto. Truffle pesto was invented because it combines two great Italian traditions in a single product: pesto with its historicity and truffle with its tradition.
A good Italian pesto, to be declared such, must in fact obtain a perfect balance of ingredients. In this case, basil, oil, dried fruit, truffles and cheese. To enjoy our truffle pesto in the best possible way, we recommend cooking egg “tagliatelle”, draining them and mixing pasta with truffle pesto in a pan. Complete the dish flakes of truffle and a drizzle of extra oil.
